In order to better meet the needs of their growing customer base, Crescent Meats was a recipient of a $60,000 loan from the Regional Business Fund Revolving Loan Fund (RLF), which was awarded by the Chippewa County Economic Development Corporations Revolving Loan Fund Committee in July 2008.
Crescent Meats is a family operated full-service meat processing plant and is owned by Wayne and Stacey Lautsbaugh. They moved their family from southern Pennsylvania to start their business at 1533 State Hwy. 29 in Cadott, Wisconsin six years ago.
The total cost of Crescent Meats expansion project was nearly $700,000 and they doubled their size by building a 4,000 sq. ft. addition to their existing facility. The new building is used for retail sales as well as processing new slaughter; it contains an animal holding pen and equipment such as a new freezer and walk in cooler. Their slaughterhouse floor features new modernized hydraulics and equipment as well. They have spent $80,000 on specialty systems like a new grinder and saw. They also remodeled the office, the break room and the restrooms. The company expects to create six new jobs within the next two years. The new facility allows them to be more efficient in their operations. They save nearly $2,000/month in electricity, carcass breaking, frozen meat handling time, holding pen labor costs and processing to eliminate cross contamination.
Crescent Meats offers the quality and service of an old fashioned meat market with modern technology to provide the highest quality meat possible. Their meat cutters have attended sausage processing classes at UW-River Falls, through the college of Agriculture, Food and Environmental Science. Their meat products include many varieties of beef, pork, bison, elk and lamb. Their meats have won many state awards as well as national awards. In 2007 the Whole Muscle Jerky won national grand champion at the American Association of Meat Processors (AAMP) competition. Several products took awards at the Wisconsin Association of Meat Processors (WAMP) in April 2009 including grand champions Restructured Hillbilly Jerky and Smoked Mushroom and Swiss Brat. All of their meats are 100% free of any hormones, growth promoting implants, additives or chemicals. They are constantly investing in new flavors for their products. For example, they have 40 different kinds of brats.
In order to become a better entrepreneur, the owners attended the Entrepreneurs class through the Small Business Development Center. They have attended seminars through the Chippewa County Economic Development Corporation and Charlie Walker of Chippewa County EDC assisted them in applying for a 2008 Agricultural Development and Diversification Grant. They have also worked with the UW-Extension to teach a seminar on direct marketing for beef producers and have held tours for FFA students and 4H groups.
